I love berry season. Blueberries, raspberries, blackberries and strawberries are my favorite. They’re high in antioxidants and good for your heart, bones, mental health and could prevent cancer! Plus they just taste so good! Eat them whenever you get the chance! Here are 5 quick and healthy berry recipes.
Berry Parfait with Coconut Cream: 1/2 cup canned coconut cream, 1 tsp vanilla extract, 1/2 cup blueberries, 1/2 cup raspberries, 1/2 cup unsweetened shredded coconut. Make the cream – whip coconut cream and vanilla extract until frothy. Fill up the glass with berries on the bottom, add cream, and then shredded coconut. Repeat until the glass is filled. This delicious berry parfait will feel like a treat. Coconut cream can be high in calorie, but if you’re following Paleo or are vegan, it’s a good alternative. You can eat this as a healthy snack or healthy breakfast. It’s a good Paleo Breakfast or Paleo snack recipe.
Berry Orange Carrot Smoothie: 1 cup unsweetened almond milk, 1 cup sliced carrots, 1 orange (peeled), 1 cup blackberries. Add everything to a blender. Blend until smooth. Smoothies are such an easy way to add berries to your diet. You can buy frozen or fresh berries. You could leave out the almond milk if you wanted and just use water instead. You can also add other fruits if you wanted like banana or apple.
Strawberry, Blueberry, Cucumber and Avocado Salad: 1/4 avocado (peeled), 6 strawberries (de-stemmed), 1/4 cup blueberries, 1/4 cup sliced cucumber, 2 cup salad greens, simple vinaigrette. Slice strawberries, cucumber and avocado. In a bowl, add some salad greens of your choice (spinach, red leafy lettuce, green leafy lettuce, arugula, etc). Top the greens with the strawberries, cucumber, avocado and blueberries. Drizzle on a bit of dressing and enjoy.
Blueberry, Watermelon and Mint Salad: 1 cup cubed watermelon, 1/4 cup finely chopped mint, 1 TBSP lime juice, 1/2 cup blueberries, 1 cup chopped romaine lettuce. Toss everything but the romaine lettuce together. Serve over the romaine lettuce. Delicious!
Blueberry Omelet: 1 tsp coconut oil, 4 eggs, 1 TBSP Coconut Aminos, 1 tsp cinnamon, 1/4 tsp ground black pepper, 1/2 cup blueberries. Whisk the eggs. Add the coconut aminos, cinnamon and pepper. Stir well. Heat up a pan and melt the oil. Pour the egg mixture into the pan, cooked for 2-3 minutes. Sprinkle blueberries on top and cook for about 6 minutes on low heat. When the egg is cooked all the way through, flip over quickly to cook the other side for about 2-3 minutes. Transfer to a plate and serve. Enjoy this unique berry breakfast.
