We used to go to this restaurant where my parents live that had avocado tacos on the menu. They were SO FREAKIN’ DELICIOUS. We quickly realized how easy these are to make and now we make them for ourselves all the time. The only thing you’re really “cooking” is the tortilla – which is basically just warming it up, so it’s a quick meal idea. We usually add some beans on the side – just get some whole beans, a bit of salsa, some garlic powder, pepper, chili powder and cumin. Simmer a bit in a pot with a small amount of water. You can mash them if you’d like and you have some good beans on the side. Better than the canned refried beans you can get at the store!
Here’s the Avocado Tacos recipe I’ve been raving about:
AVOCADO TACOS (serves 1)
2 corn tortillas
½ avocado, pitted, peeled & diced
¼ cup tomato, diced
½ cup lettuce, shredded
1. Warm the tortillas.
2. Add the avocado, tomato, lettuce and salsa evenly to each tortilla.
3. Fold up and enjoy.
4. Double or triple the recipe depending on how many people you’re making these for.
