Every year after Thanksgiving you’ll find yourself wondering what you’re going to do with all that leftover turkey meat…. well, here’s a simple to make soup recipe. Turkey Vegetable Soup with Rice. It’s got delicious fresh veggies, some rice (leftover rice is fine, as the recipe calls for cooked rice), and some of your delicious leftover turkey meat. You can add other veggies if you desire such as potatoes, sweet potatoes or use frozen veggie medley to make it even easier on you. Hope you enjoy this tasty soup. Great meal to use up leftovers on a cold evening.

Turkey Vegetable Soup with Rice

  • 1 TBSP olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, sliced
  • 2 medium stalk celery, sliced
  • 5 cups Broth
  • 1 tsp salt  (add more if needed)
  • 1 tsp ground pepper  (add more if needed)
  • 1 cup cooked rice
  • 1 1/2 cup fresh corn kernels
  • 2 cup cooked turkey breast, diced
  • 1/2 cup  fresh parsley leaves, chopped
  1. Heat oil in soup pot over medium heat.
  2. Saute onion until translucent.
  3. Add broth, carrots, celery, salt, and black pepper.
  4. Turn up to high heat until boiling.
  5. Reduce to low heat and simmer until vegetable are tender.
  6. Add corn and rice to soup. Heat again until boil.
  7. Add turkey and continue cooking on low for 5 minutes.
  8. Remove soup pot and serve.
