Cucumber Tuna Boats (Paleo, no cook, gluten free)

Looking for an easy paleo recipe?

Look no further. This Cucumber Tuna Boats recipe can be whipped up in no time.

No cooking, just prepping.

So, the recipe is for “tuna” boats, but you could use salmon or any wild-caught fish you wanted really.

You also don’t have to eat this like a “boat”, you could just cut the cucumber into slices and top each slice with a scoop of the tuna mix and eat them as “bites” instead.

Cucumber Tuna Boats - paleo, no cook, gluten free

  • 5 oz can wild albacore tuna (Wild Planet is a good choice)
  • 1 celery stalk, chopped small
  • 1/8 cup red onion, chopped small
  • 1/4 cup apple, chopped small
  • 1/4 cup – 1/2 cup Paleo Mayonnaise (add more/less according to how creamy you like it)
  • 1/2 tsp dried dill
  • 1/2 tsp garlic powder
  • dash sea salt
  • dash ground black pepper
  • 1 cucumber (peeled or not, depending on how you like it)

DIRECTIONS: Chop off the ends of the cucumber (any stems). Slice the cucumber in half length-wise. Scoop out some of the insides of it to make a long “canal” in the cucumber. Chop up the stuff you scooped out, add to a medium bowl. Add the rest of the ingredients to the bowl (except the cucumber boat). Stir well then scoop into the boats and take a bite! Eat them all up! Save leftovers for later, (you might need another cucumber!).
